Ingredients:

-1 whole chicken, butterflied -2 tbsp. olive oil -2 lemons, juiced -1 lemon, sliced into rounds -1 tbsp. garlic powder -1 tbsp. onion powder -1 tsp. dried oregano -1 tsp. dried thyme -sea salt and black pepper, to taste

Instructions:

  1. Preheat your grill to medium-high heat. (If using a charcoal grill, wait until the coals are hot enough so that you can hold your hand 6 inches above the grate for no more than 5 seconds.) Meanwhile, in a small bowl, mix together olive oil, lemon juice, garlic powder, onion powder, oregano, thyme, salt and pepper.

  2. Place the chicken on a cutting board and generously season both sides with the lemon mixture. Grill for about 4 minutes per side or until cooked through; during the last few minutes of cooking time, add lemon slices to the chicken so they can heat up and release their flavors. Serve immediately!

1/2 cup olive oil

Ingredients: -1 whole chicken -extra virgin olive oil -sea salt -fresh cracked black pepper -lemon juice -1 tablespoon of dried oregano -1 teaspoon of garlic powder

Instructions: 1. Preheat your grill to medium-high heat. 2. Remove the giblets and neck from the chicken cavity and discard them. Rinse the chicken inside and out with cool water. Pat the chicken dry with paper towels. 3. Rub the chicken all over with a generous amount of extra virgin olive oil. Sprinkle generously with sea salt, fresh cracked black pepper, lemon juice, oregano and garlic powder. 4. Grill the chicken for about 45 minutes, or until the juices run clear when you cut into the thickest part of the breast meat with a sharp knife. Make sure to rotate the chicken every so often so that it cooks evenly on all sides. 5. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes before carving it into 8 pieces. Serve hot!
