Grilled Chicken Topped with Herbs and Spring Vegetables

This grilled chicken dish is easy to make, and it's packed with fresh and bold flavors. The chicken is topped with a mix of chopped herbs, such as parsley, thyme, and chives, as well as some grilled vegetables like asparagus and zucchini. This recipe is perfect for a summertime meal, and it's sure to please everyone at the table.

Ingredients:

-4 boneless, skinless chicken breasts -1 bunch of asparagus, tough ends removed -1 zucchini, cut into thick slices -1/2 cup of chopped fresh parsley -1/4 cup of chopped fresh thyme -1/4 cup of chopped fresh chives -3 cloves of garlic, minced -1/3 cup of olive oil -juice of 1 lemon -salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat.

  2. In a bowl or a zip top bag, combine the chopped herbs, garlic, olive oil, lemon juice, salt and pepper. Place the chicken breasts in the marinade and coat evenly. Let sit for at least 15 minutes or up to several hours if time allows.

  3. Assemble the grill: place the asparagus spears on one part of the grill grate over direct medium heat, and place the zucchini slices on another part of the grate over indirect medium heat. Grill for 3-5 minutes per side until slightly charred and crisp tender; keep an eye on them so they don't burn!

  4. Remove everything from the grill grate except for the chicken breasts. Grill for 5-7 minutes per side until cooked through; use a meat thermometer to check if they are at 165 degrees F when inserted into the center of the chicken breasts.

  5. Serve the grilled chicken breasts topped with some of the grilled vegetables and herb mixture. Enjoy!

Grilled Chicken with a Honey and Balsamic Glaze

Ingredients:

-1 pound boneless, skinless chicken breasts

-1 tablespoon olive oil -1/4 cup balsamic vinegar -1/4 cup honey -1 teaspoon dried oregano -1/4 teaspoon freshly ground black pepper -1/4 teaspoon garlic powder Directions: 1. Preheat grill to medium-high heat. 2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, oregano, pepper, and garlic powder. 3. Place chicken breasts in a large resealable bag or glass dish. Pour the marinade over the chicken, making sure to coat all of the meat. Marinate for at least 30 minutes, or up to 12 hours. 4. When ready to grill, remove chicken from the marinade and discard any excess. Grill for 6-8 minutes per side, or until cooked through. 5. Serve with your favorite sides and enjoy!

Grilled Chicken with a Lemon Basil Sauce

4 boneless, skinless chicken breasts

1/2 cup olive oil

2 tablespoons fresh lemon juice

1) Preheat grill to medium-high heat.

2) In a shallow dish, combine olive oil, lemon juice, basil, salt and pepper.        3) Place chicken breasts in the mixture, making sure each piece is well coated.        4) Grill chicken for 6-8 minutes per side, until cooked through.  

5) Serve with Lemon Basil Sauce.

Maple Grilled Chicken Drumsticks

These delicious grilled chicken drumsticks are marinated in a sweet and smoky maple sauce.

Ingredients:

1/4 cup pure maple syrup

1/4 cup apple cider vinegar

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon chili powder

Kosher salt and freshly ground black pepper, to taste

8 chicken drumsticks

2 tablespoons olive oil, divided

Instructions:

In a large resealable bag, combine maple syrup, apple cider vinegar, smoked paprika, garlic powder, chili powder, salt and pepper, shaking well to combine. Add chicken drumsticks and coat evenly. Refrigerate for at least 2 hours, up to 12 hours. Preheat grill to medium-high heat. Grill chicken for 10-12 minutes per side, or until cooked through. Serve immediately.

Grilled Spicy Lime Chicken Skewers

If you love chicken, then you'll love these Grilled Spicy Lime Chicken Skewers. They are simple to make and full of flavor.

Ingredients:

4 boneless, skinless chicken breasts

1/2 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon salt

1/4 teaspoon pepper

1/3 cup lime juice

3 tablespoons olive oil, divided

1 large red onion, cut into chunks 3 bell peppers, cut into chunks (any colors) Instructions:

Preheat grill to medium-high heat.  

In a large bowl, mix together cumin, chili powder, salt and pepper. Cut each chicken breast into 1-inch cubes and add to bowl. Toss with spices until evenly coated.

In a small bowl, whisk together lime juice and 2 tablespoons of olive oil. Pour over chicken and toss to coat. Thread chicken onto skewers (if using wooden skewers, soak in water for 30 minutes before using). Grill for 8-10 minutes per side, or until cooked through.  Thread red onion and bell peppers onto skewers (if using wooden skewers, soak in water for 30 minutes before using). Grill for 5-7 minutes per side, or until slightly charred. Serve with grilled chicken skewers and enjoy!
