Ingredients:

In a large resealable bag, combine the olive oil, lemon juice, rosemary, thyme, salt and pepper. Add the chicken breasts and seal the bag. Ingredients:

-1 lb. boneless, skinless chicken breast

-1/2 red onion, diced

-2 cups baby spinach

-1 cup chopped asparagus

-1/2 cup chopped celery

-1/4 cup chopped parsley

For the dressing:

-1/4 cup tahini paste -3 tbsp. olive oil -3 tbsp. lemon juice -2 cloves garlic, minced -2 tsp. honey -1 tsp. dried oregano -1/4 tsp. salt -Freshly ground black pepper, to taste

DIRECTIONS:

1) Preheat grill to medium high heat. Sprinkle both sides of chicken with salt and pepper. Grill for about 6 minutes per side, or until fully cooked through. Let cool slightly before dicing into bite size pieces. 2) In a large salad bowl, combine diced chicken, red onion, baby spinach, chopped asparagus, chopped celery and chopped parsley. 3) In a small bowl or jar, mix together tahini paste, olive oil, lemon juice, garlic, honey, oregano, salt and black pepper until well combined. 4) Pour dressing over salad and toss to coat evenly. Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup fresh lime juice
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeno, seeded and diced
  • lime wedges, for serving

Instructions: 1. In a large bowl, combine the lime juice, chili powder, smoked paprika, garlic powder, cumin, salt and black pepper. Add the chicken breasts and toss to coat. Cover and refrigerate for at least 2 hours, or up to 12 hours. 2. In a small bowl, whisk together the olive oil and cilantro. Set aside. 3. Preheat grill to medium heat. 4. Grill the chicken for 6-8 minutes per side, or until cooked through. Brush with the cilantro mixture during the last few minutes of cooking. Serve with lime wedges and jalapeno slices.
